It is a way of preserving culture when we move to new places and a means of coping with homesickness. The unique cuisine from each country can reflect its history, lifestyle, values and beliefs.

How to participate?Step 1: RegistrationInteractive Cooking Class:
Saturday, May 28: 11:00 a.m. - 12:30 p.m. Participants with the pre-packaged ingredients will join the interactive cooking class to interact with the chef, ask questions to get feedback live and learn tips and tricks on how to improve your cooking skills. The class includes:

Prepare your own ingredients ahead of time and tune in on May 28 at 11:00 a.m. Participants can view the cooking class via Facebook / YouTube Live. Step 2: Get ready for the class Prepare the ingredients as listed on the recipes. Remember some ingredients need to be prepared before the class.

Chef Alessa ValdezI started my culinary career in Toronto, Ontario. Gaining 16 years of experience in the industry, working at some of Toronto’s best restaurants which include Auberge du Pommier, Buca Yorkville, Alo Bar, and Gusto 54 food group. My love for food all started with my mom. Growing up in a Filipino culture, cooking was always a big part of my family growing up. My mom would always get up really early and just cook all day when we would have big family gatherings. I remember just watching her and thinking to myself, wow… one day I will be able to cook just like her. I skipped going to culinary school and just started working right out of high school, from there I worked my way up to many management positions learning from great chefs along the way.
Last year when covid hit I was working at Gusto 101. Restaurants kept shutting down and re-opening just for takeout service and I was falling out of love with the industry. Knowing I needed a challenge, I reached out to a friend that was working in the Okanagan and that’s when my adventure out west began. I started working at Phantom Creek as the senior sous chef last year, opening the restaurant in June of 2021. It has been such a big change moving from a big city to the valley. It was a little hard to get use to everything in the beginning but now I’ve fallen in love with living out west. I’ve never had so much appreciation for working with such beautiful ingredients out here. This year, I have been given the opportunity to run the kitchen at Phantom Creek and show case my talents. We are working with farmers around the valley to bring local ingredients to our menu. My philosophy for food is simple. With a French fine dining background, I like to incorporate French techniques to my menu and let the ingredients shine without masking the flavor too much. I believe that the ingredients should speak for itself rather than hiding the flavor of it. |
